In Texas, I have been renting a shop to cut hair, now my landlord wants me to sign a lease. Do I have to enter into a lease agreement or can I continue to just pay rent?

You can do whatever you want to.
However, if you don't sign a lease, the landlord can kick you out. You are on a month-to-month unwritten lease right now.
